Easy, Chewy Almond and Coconut Energy Bar | Recipe

I've been trying to find some quick and tasty recipes for snacks that will stop me from munching on junk food as often. I've seen a lot of recipes for energy bars/balls floating around and decided to give them a try. This recipe was heavily inspired from soft and chewy granola bars which I adjusted it to things that I already had in my house. They were really easy to make and tasted delicious. 






You will need:
115g rolled oats
40g chopped almonds
2tbsp flakseed 
3tbsp brown sugar
3tbsp desiccated coconut 
2tbsp honey
3tbsp golden syrup
1tbsp coconut oil

1) Firstly, I lightly cooked the desiccated coconut, almonds and rolled oats on a frying pan with no oil just to add a little extra crunch. 


2) In a pan, add the wet ingredients and brown sugar to create a binding agent. This becomes a syrup-like texture and adds sweetness to your dry ingredients

3) Mix in all the remaining ingredients and set out in a lined baking tray.




4) Allow to cool to room temperature then put in the fridge for around 10-15 minutes. Cut into bar shapes and enjoy! This recipe makes around 16 squares.
