Ginger Snaps recipe

I got this recipe from my Mary Berry's complete cookbook which I got for my birthday last year. I've made so many delicious recipes from this book and I thought I'd share with you one of the treats I first made a few weeks ago. These ginger snaps are so quick and easy to make and contain ingredients you're likely to already have in your cupboards
All you need is:
60g butter
90g Golden Strup
125g self-raising flour
2tsp ground ginger
1tsp ground cinnamon
1/2tsp bicarbonate of soda
1tbsp caster sugar

Stupidly, I managed to read tsp as tbsp and put way too much ground ginger in, so they are pretty spicy! Although they taste delicious dipped in tea and I'm sure if they were made properly they would be fine as they are. Also, make sure you take these out at the time stated in the recipe as they harden once cooled. I think next time I might put them in for less time to make them much softer in the middle. I love these and I definitely recommend you try them out!
