Red Velvet Cookies | #BLOGMAS Day 18

Baking over the Christmas period is my favourite thing to do, and these easy Red Velvet Cookies are perfect for a quick treat. This recipe is from Cupcake Jemma and you can get the full details from her YouTube video
Ingredients:
200g plain flour
20g cocoa powder
1 tsp baking powder
1/4 tsp salt
115g unsalted butter, soft
150g light soft brown sugar
50g caster sugar
1 large free range egg
2 tbsp natural yoghurt
1.5 tsp vanilla extract
1.5 tsp red food colour paste
100g white chocolate chips
20g cocoa powder
1 tsp baking powder
1/4 tsp salt
115g unsalted butter, soft
150g light soft brown sugar

1 large free range egg
2 tbsp natural yoghurt
1.5 tsp vanilla extract
1.5 tsp red food colour paste
100g white chocolate chips
The instructions are fairly simple. You want to mix all the dry ingredients with the butter, brown and caster sugar. Once this is all mixed in, you want to add the yoghurt, eggs, vanilla extract and red food colouring. I actually had to get a different red food colouring than the one in the picture as that didn't give me a vibrant pigment. I recommend getting red food paste as it makes the cookies bold and red.
The original recipe uses white chocolate chips but I personally like to do half and half just so that they look more exciting. I also mix half in the mixture and then roll each cookie ball into a plate of chocolate chips so that they can be seen on the outside like the picture above. Remember that once you've done your mixture, you need to refrigerate it for an hour to make it easier to roll into balls. I did end up using an ice cream scoop to make it less messy as mine was still fairly sticky.
