Banoffee Cupcake Recipe

As some of you may already know, I receieved my birthday present 5 months early and got a kMix! I am so excited about it and these cupcakes are actually the first thing I had made using the kMix! I have a whole post dedicated to the kMix - linked here. A few weeks back I posted my Banana bread recipe, but I thought I'd share another recipe that you could follow if you have some ripe bananas lying around. These cupcakes are super easy to make and are sweet and delicious! I used an online recipe from UKTV which was easy to follow.  
For the cakes you need:
250g unsalted butter
250g caster sugar
4 eggs
1 ripe banana
250g self-raising flour
For the icing you need:
250g unsalted butter
550g icing sugar
9tsp caramel - check the website for recipe

The cupcake itself is basically just a banana cake, so if you're not a fan of toffee and the whole banoffee concept, then you can simply add a normal vanilla buttercream to the tops of your cakes. This however, does have some caramel lying through the icing. The recipe on the UKTV site makes a very liquid caramel and it turned out to be quite runny and clear in colour - it still tasted good though! If you want something with a bit more colour to it and thickness, then perhaps skip out the cream and this will give you a more traditional caramel. However I actually liked the caramel that I had made so I stuck to it. I wanted to decorate the cupcakes with little pieces of fudge, but I couldn't find any in my local Tesco, so instead I just added a few white heart cake decorations. Also, I only made half the amount of icing as it seemed like quite a lot - it covered most of the cupcakes, but left me with about 5 or 6 icing-less. 
These cupcakes are so delicious and are a great way to incorporate ripe bananas! If you give this a go then I'd love to see you tweet me some pictures.
